Kadhai paneer is a restaurant style tangy, spicy paneer recipe which is liked and enjoyed by almost all age groups. Freshly ground spices are added to it called kadhai masala, which gives it a unique flavor. To make it more flavorful bell peppers and onion are added to it. You can find this dish on every menu of an Indian restaurant. so you can make out how popular this dish is.
So let us learn step by step restaurant style kadhai Paneer at home.
Ingredients:
For kadhai masala:
Red chili whole - 2-3
Cumin/jeera seed - 2 tsp
Coriander/dhania seed - 2 tbsp
Fennel/saunf seed - 2 tsp
Black pepper/kaali mirch corns - 8-10
For sauteed paneer:
Capsicum - 1
Onion - 1
Tomato - 1
Paneer - 400 gm
Ghee - 1 tbsp
Kadhai masala - 1 tbsp
For gravy:
Ghee - 3-4 tbsp
Cumin seed/jeera - 1 tsp
Onion (finely chopped) - 2 (medium)
Tomato (crushed) - 5 (medium)
Garlic - 1 tbsp
Ginger - 1 tbsp
Green chili - 2-3
Turmeric/haldi powder - 1/2 tsp
Kashmiri red chili powder - 2 tbsp
Coriander/dhania powder - 1 tbsp
Kadhai masala - 3 tbsp
Salt - acc. to taste
Dry fenugreek/Kasuri methi - 2 tbsp
How To Make Kadhai Paneer:
Kadhai Masala: In a pan/kadhai add all ingredients of kadhai masala.
Roast all masala on low flame for few seconds.
Let it cool and blend them into a fine powder.
Sauteed Paneer: In a pan/kadhai add ghee.
Add bell peppers, onion and paneer.
Add 1 tsp salt and 1 tbsp kadhai masala.
Sauté on medium flame till everything is well coated and gets a nice color.
Set aside.
Gravy: In a kadhai add ghee.
Once the ghee is warm enough add jeera.
Add ginger, garlic and green chili.
Add onion and sauté till light golden brown.
Add dry masalas, coriander powder, kashmiri lal mirch powder, haldi powder, sauté a little.
Add little water to avoid burning of masala.
Add tomatoes, to it add kadhai masala and little water.
Cover with lid and let it cook on low flame till oil separates.
Add salt, Kasuri methi and fresh coriander.
Mix well.
Add sautéed paneer and veggies
Mix well.
Add sliced ginger.
Mix and serve hot with Naan, Lachha paratha or Roti.

Some Pro Tips:
Prepare freshly ground masala as shown in the video for best taste and texture.
You may cut veggies and paneer as per your desired shape and size.
Do not over cook paneer as it may become chewy.
Keep consistency of the gravy as per your liking.
You may garnish it with fresh cream while serving.
