Broccoli and Almond soup is a thick, creamy and healthy soup. It is power pack soup as it is rich in proteins, minerals, vitamins and fiber. The soup is good for the kids as well as for the people looking for weight loss as it keeps you full for a longer time. The soup is equally healthy for the people suffering with diabetes, hypertension or high blood pressure.
Broccoli is a green vegetable and is known as powerhouse as it is a great source of Vitamins, minerals, good carbs, fiber and very little fat. It is enriched with Vitamin C which is a powerful antioxidant and protects the body from damaging free radicals. Whereas, Almonds are rich in healthy fats, protein and fiber. It also gives a nutty taste to the soup.
So let’s get started…..
Ingredients:
· Broccoli florets – 250 gm
· Onion (medium) – 2 (roughly chopped)
· Garlic cloves – 4-5
· Almond (blanched) – 15-20
· Milk – 250 ml
· Olive oil – 2 tsp
· Butter – 5-10 gm
· Salt – according to taste
· Black pepper powder – 1 tsp
· Fresh cream – 2 tbsp (optional)
· Water – as per requirement
How To Make Broccoli and Almond Soup:
1. Add olive oil in a pan and let it heat.
2. Add onions and garlic cloves to the oil and sauté till it is translucent.
3. Add broccoli florets and peeled almonds, sauté for few seconds.
4. Add water and let it boil.
5. Cover it with lid and let it cook on slow gas till the broccoli becomes tender.
6. Check after 10 minutes and let it cool down.
7. Grind everything together to a smooth paste (add little water if required).
8. In a pan add butter and let it melt.
9. Add milk and bring it to a boil.
10. Add broccoli puree to the milk and let it boil while stirring it continuously.
11. Add salt and black pepper powder and adjust the consistency.
12. Top it with some fresh cream.
13. Garnish it with boiled broccoli and almonds.
14. Serve hot with bread, salad or before meal.

Some Pro Tips:
1. You may use any oil of your choice, but soups taste better in olive oil.
2. Do not sauté onions too much as it might change the color of the soup.
3. You may use skimmed or toned milk.
4. First boil the milk and then add broccoli puree to it to avoid curdling of milk.
5. Keep stirring continuously after adding puree until it comes to a boil.
