Sweet Corn Soup as the name suggests is prepared with sweet corn. Nowadays sweet corn soup is very common in almost all restaurants in all parts of the world. Sweet corn is a variety of maize. Unlike other corn varieties which are harvested when kernels are dry and mature, sweet corn is harvested when it is immature and milky. It is harvested before the sugar in it turns into starch.
Sweet corn has been a staple food of Native American tribes. Sweet corn soup originated from there. However, it soon became popular in the southern and central regions of the United States.
The best way to have sweet corn is in the form of soup. Adding a few other ingredients makes it a wholesome meal, just ideal for weight loss. Apart from being delicious, it has many health benefits.
· It lowers the cholesterol level. It has high fiber content which is soluble in nature. It gets mixed with blood and forms a gel-like substance that absorbs the bad cholesterol (LDL cholesterol).
· It prevents diabetes as it maintains the insulin level in our body. It also has Vitamin B which is helpful in regulating protein, lipid, and carbohydrates.
· It has various other essential minerals and vitamins which improve your skin texture and eyesight too.
· It has omega 3 fatty acids which reduce the risk of a heart attack.
So, all in all including sweet corn soup in your daily diet can prove to be a boon to your health.
Here is the recipe
Sweet Corn Soup:
Ingredients:
Sweet corn Kernels – 1 1/4cup
Carrot – ¼ cup (finely chopped)
French beans – ¼ cup (finely chopped)
Ginger – 1tbsp (finely chopped)
Green chili – 1tsp (finely chopped)
Cornflour – 1tsp
Salt - according to taste
Black pepper powder – 1tsp
turmeric powder - 1/4 tsp (optional)
lemon juice - 1 tsp
Water – 400 ml
How To Make Soup:
1. Grind 1 cup of corn kernels into a coarse paste.
2. Keep aside ¼ cup of kernels.
3. In a wok add water, corn paste, and corn kernels.
4. Let it come to a boil.
5. Once it starts boiling add turmeric powder, carrot, green chili, and ginger to it.
6. Cover it with a lid and let it boil on simmer.
7. Add beans, salt, and pepper and let it boil on slow gas till corn gets tender.
8. Once the corn is tender adjust the consistency of the soup by either boiling or adding more water to it.
9. Make cornflour slurry by mixing cornflour and 2-3 tbsp of water.
10. Add this slurry to the soup.
11. Keep stirring till it comes to a boil.
12. Add lemon juice.
13. You may add 1tbsp of butter to it.
14. Garnish with scallions or coriander leaves and serve hot.

Some Pro Tips:
Coarse grind the corn kernels. Do not over grind.
You can add vegetables as per your choice.
Add slurry to the soup little by little as this soup is not very thick so adjust the consistency accordingly.
