Eggless Banana Walnut Bread

Hi Chefs!!

Nothing is more blissful than a homemade Banana Walnut Bread. I have tried many recipes but this is the best ever recipe for Banana Walnut Bread. A sweet hearty banana flavor, toasty crust, and moist cake-like interior of the bread with a crunch of walnuts is a melt in the mouth. It is a simple go-to recipe yet delectable with very few ingredients. You may even replace walnuts with chocolate chips if you are baking for your children.

So now let us learn a recipe that will never fail you…..


Ingredients:


· APF/Maida – 220 gm or 1 ½ cup

· Baking Powder – 1 tsp

· Baking Soda – ½ tsp

· Salt – ½ tsp

· Bananas – 3 nos (ripened)

· Oil (odorless) – 180 ml or 1 cup

· Sugar (powdered) – 160gm or ¾ cup

· Vanilla essence – ½ tsp

· Walnuts – handful (roughly chopped)

· Milk – 2 -3 tsp (if required)


Material Required For Baking:


· Measuring cups

· Measuring spoons

· 9”×5” loaf pan

· Parchment/butter paper


How To Bake Banana Walnut Bread:


1. Line your loaf pan with parchment paper and grease well.

2. In a bowl mash the bananas well with the help of a fork.

3. Add the vanilla essence and sugar.

4. First mix it with a fork (so that sugar does not fly around), then whisk it well with an electric/hand whisker till sugar dissolves completely.

5. Add oil to the mixture and again whisk it well till the mixture becomes one.

6. In another bowl sieve APF/Maida, baking powder, baking soda, and salt together.

7. Add the dry mixture into the wet mixture in two batches.

8. Combine well with the cut and fold method. Do not mix vigorously.

9. Add little milk if the batter is thick and combine well.

10. Add 2/3rd of walnuts to the batter and mix it well.

11. Pour the batter in the pre-lined loaf pan and sprinkle remaining walnuts on top.

12. Bake in preheated oven @180°C for 45-50 minutes.

Some Pro Tips:


1. Always use measuring cups and spoons to get the best result.

2. Always pre-line your pan/tin before starting the process.

3. Whisk banana, sugar, and oil well till the mixture becomes one.

4. Sieve APF/Maida to remove any impurities.

5. Do not overmix the batter otherwise the bread will be dense.

6. Always preheat your oven before placing your pan inside.

7. Do not open the oven door again and again to check.

8. If you want to check up on your bread open the oven door only after 25 minutes.

9. Insert a toothpick in the middle of the bread to check if it comes out clean the bread is done otherwise bake for few more minutes.

10. After taking it out from the oven, cover it with a kitchen cloth and let it cool completely.

11. Cut thick slices with a serrated knife and enjoy with tea/coffee/milk.
