Eggs In Potato Blanket

Hi Chefs!!

Today we are going to learn a very interesting recipe for eggs - ”eggs in potato blanket”. Before we jump to the recipe let us learn some facts about Eggs. Chicken Eggs are the most commonly consumed eggs. Although other poultry eggs such as duck and quail are also eaten. Eggs are a common everyday food in most parts of Asia, such as China and Thailand.

An egg has a thin hard shell covering. Inside this hard covering, it has three thin liquidy layers the yolk, albumen, and chalazae. The egg white or Albumen is colorless and transparent but turns white upon cooking. Its primary purpose is to protect the yolk and provide nutrition during the growth of an embryo. The egg white contains no fat and the carbohydrates content is also very less. Besides cooking and baking the egg white is also used in preparing vaccines. The egg yolk contains Fats. The color of the yolk depends on the diet of the hen. If the diet of hen contains yellow/orange plant pigments then they are deposited in the yolk, thus giving it the color. The egg yolk is suspended in the egg by white spiral bands of tissue, which is called chalazae.


Eggs are a very good source of proteins, minerals, vitamin A, vitamin B-12, & Vitamin D, and various other nutrients, thus providing energy to the body. They are rich in protein, thus help in building muscles. They are good for the brain and eye health. Eggs contain folic acid, so are recommended for pregnant women. So including eggs in our daily diet is good for health.


Egg in potato blanket is a savory-fried snack. A recipe about boiled eggs which are covered with a thick layer of boiled mashed and spiced potatoes. It is a great tasty snack that can be enjoyed at any time of the day. Let us learn………..


Eggs in Potato Blanket:


Ingredients:


· Potatoes – 500 gms (boiled & mashed)

· Eggs – 6 Nos (hard-boiled)

· Red chili powder – 2 tsp

· Chat masala – 2-3 tsp

· Green chili – 2-3 (chopped)

· Coriander – 2 tbsp (chopped)

· Salt – according to taste

· Bread crumbs – 4-5 tbsp

· Lemon juice – 2 tsp

· Oil – for frying


How To Make Egg in Potato Blanket:


1. In a saucepan add water and let the eggs boil for 7-8 minutes.

2. Drain the hot water and add cold water to the saucepan, peel the outer shell of the eggs and keep eggs aside.

3. In a bowl take boiled and mashed potatoes.

4. Add red chili powder, chat masala, green chili, coriander, salt, lemon juice, and bread crumbs.

5. Combine the mixture well (add more bread crumbs if need be).

6. Take ball size mixture and place the egg in the center of the mixture.

7. Cover the egg with a thick layer of potato mixture and shape it spherical/ round.

8. Prepare/shape the rest of the eggs in the same way.

9. Heat oil in a wok/kadahi.

10. When the oil is hot enough deep fry the eggs covered with potato mixture till you get golden brown color on low medium heat.

11. Take it out on a plate.

12. Cut it in the center with a sharp serrated knife.

13. Sprinkle some chat masala.

14. Serve hot with ketchup.

Some Pro Tips:


1. While boiling eggs add a teaspoon of vinegar to the water to avoid breaking of shell and leakage.

2. After boiling transfer the eggs to a bowl filled with chilled water for easy peeling of the shell.

3. You may adjust all spices according to your taste.

4. Before frying the whole thing first add a little ball of the mixture to the hot oil.

5. If it splits then add more bread crumbs to the mixture.

6. While frying add 2-3 pieces only to the wok at a time to avoid cracking.
