Its salad time now!! Say bye bye to boring salads. Salads are one meal that can be made as interesting, colorful and nutritious as ever. Here is a recipe for one such salad which has all the goodness of Carbohydrates, proteins, minerals, vitamins and fiber. The orange juice dressing and little bit of spices gives it an Oomph!! factor. This salad can be had as a snack or as a meal as well.

Ingredients:
· Macaroni – 1 cup (boiled)
· Apple – ½ cup (diced)
· Cucumber – ½ cup (diced)
· Pomegranate – 1/2 cup
· Corn Kernel – ½ cup (boiled)
· Paneer/Cottage Cheese – 100 gm (cut into cubes)
· Cashew – 1-2 tbsp (chopped)
· Almond – 1-2 tbsp (chopped)
· Lettuce – few leaves
· Mint leaves – 8-10
· Fresh Orange juice – ¾ cup
· Extra Virgin Olive(EVO) oil – 1-2 tbsp
· Chili flakes – 1 tsp
· Salt – according to taste
· Black pepper powder – ½ tsp
How To Make Salad:
1. In a bowl add Macaroni, apple, cucumber, pomegranate, corn kernels, paneer, cashews, almonds, shredded lettuce and mint leaves.
2. Mix them well.
3. For the dressing: In another bowl add fresh orange juice, EVO, chili flakes, salt and black pepper powder.
4. Whisk it thoroughly.
5. Add the entire dressing to the salad.
6. Mix it well.
7. Refrigerate it for a while and serve.

Some Pro Tips:
1. You may use penne pasta instead of macaroni.
2. Do not over boil macaroni.
3. You may use fruits of your choice or as per the season – like grapes, kiwi, strawberry, pineapple, berries etc.
4. You may use nuts as per your liking – like walnut, pecan, dried cranberry, pistachio etc.
5. It is best to use fresh orange juice but you may use canned juice if required.
6. Refrigerate the salad for a while before serving.
