Whole wheat-Ragi Pistachio Cookies

Hi Chefs!

There is a saying, ”A balanced diet is a cookie in each hand”. Well, this proves correct with the healthy guilt-free pistachio cookies. This is a healthy option for kids as well, as it does not contain APF/Maida and sugar.

Let's bake cookies for those in-between hunger pangs.


Whole wheat-Ragi Pistachio Cookies:

Ingredients:


· Whole wheat flour – ¼ cup

· Ragi/Jowar flour – ¾ cup

· Besan (Gram flour) – ¼ cup

· Rawa (Semolina) – ¼ cup

· Flax Seeds(Powder) – 2tbsp

· Pistachio(Pista) powder – ¼ cup

· Butter/Ghee – ½ cup

· Jaggery powder – ½ cup

· Baking powder – ½ tsp

· Salt – ¼ tsp

· Milk – ¼ cup

· Ginger powder – 1 tsp

· Cinnamon powder – 1 tsp

· Pistachio – 2tbsp (chopped)


Materials Required for Baking:


· Measuring cups

· Measuring spoons

· Baking tray


How to Bake Cookies:


1. In a large bowl mix all the dry ingredients.

2. Add softened butter to the mixture.

3. Mix with hand or spatula so that mixture gets crumbly texture.

4. Add milk little by little and bind the mixture into a dough.

5. Refrigerate this dough for 10-15 minutes.

6. Divide the dough equally and shape it into small round balls.

7. Add chopped pistachios on the top and flatten a little.

8. Place all cookies on a pre-lined baking tray.




9. Bake them at 180°C for 20- 25 minutes




Some Pro Tips:


1. Do not rub the dough too much with hands as hands generate heat so it will become too sticky.

2. Refrigerate the dough for some time before and after shaping it.

3. Do not over bake the cookies.

4. Check them after 15 minutes.

5. If the cracks appear and the sides are brown it is done.
