Kesariya Meethey Chawal | Meethey Chawal | Kesar Chawal | Zarda Pulao is a popular North Indian dish. It is a traditional dessert prepared and enjoyed during festivals or special occasions like Basant Panchami, Baisakhi, child birth etc. The key ingredients used in this dessert are Basmati rice, Sugar and Saffron. However, it is made rich with the addition of Ghee, Dry fruits – Almond, Cashew nuts, Pistachio etc. and several spices – Cardamom, Cloves, Cinnamon etc. This dish takes very little preparation and time and can be prepared well in advance for any occasion.
Follow the step wise instructions and recipe to prepare this mouth-watering dish.
Ingredients:
· Basmati Rice – 1 cup/170 gm
· Water – 2 cups
· Turmeric/Haldi powder – ½ tsp
· Sugar – 6-7 tbsp
· Milk – 2 tbsp
· Saffron – 12- 15 strands
· Cardamom/Elaichi powder – 1 tsp
· Clarified butter/Ghee – 2-3 tbsp
· Almond – 15-20 (chopped)
How To Make Kesariya Meethey Chawal:
1. Wash and soak rice in enough water for half an hour.
2. Drain the rice and add 2 cups of water along with rice in pressure cooker.
3. Add turmeric powder.
4. Close the lid of the pressure cooker and pressure cook the rice up to 2 whistles.
5. Open the lid of the cooker once it is cooled.
6. Transfer rice into a broad utensil and let them cool completely.
7. In a wok/kadahi add cooked rice.
8. Add sugar to it.
9. Mix rice and sugar gently.
10. Cover it with a lid and let it cook for 5-10 minutes on slow flame till all the sugar syrup is absorbed by rice.
11. Soak saffron in lukewarm milk.
12. In another pan roast the almonds in ghee on slow flame and keep them aside.
13. Once the rice is done add soaked saffron and milk, cardamom powder and rosted almonds and ghee.
14. Gently mix them all.
15. Serve hot.

Some Pro Tips:
1. Do not overcook the rice to avoid lump and stickiness.
2. You may add yellow color to rice instead of turmeric powder.
3. Adjust sugar according to your taste.
4. You may add any amount and variety of dry fruits.
5. While serving if the rice seems to be little dry add little amount of milk while reheating.
