Mango & Custard Bread Rolls

Hi Chefs!!

India is a huge culturally diverse country. Every state is known for its own unique desserts. Dessert is a course that concludes the meal. In India and several other parts of the world, a meal concludes with a dessert. It may include cakes, cookies, custards, pies, puddings, tarts, ice creams, and fruit salads, etc. Every dessert is unique in its form according to taste and fruits found in a particular season. My favorite season is summers, not because I like summers but because of the king of fruits ‘Mango’. Mango icecreams, cakes, puddings, custard be it anything it’s a boon in summers and almost everyone's favorite.

So here is one such simple, mouthwatering, loaded with fruits, a dessert recipe which I am sure kids and elders would love to eat.



For Mango Custard


Ingredients:


· Milk (full fat) – 1 liter

· Mango Custard Powder – 4 tbsp or 35 gm

(Note: If you do not have mango custard powder, you may use vanilla custard powder instead)

· Sugar – ½ cup or 100 gm

· Mango essence – 1 tsp (optional)


For Bread Rolls


Ingredients:


· Bread slice – 4-5 psc

· Mango – ½ cup (chopped)

· Apple – ¼ cup (chopped)

· Grapes – ¼ cup (halved)

· Pomegranate – ¼ cup

· Mango Juice – ¾ cup


For Mango Puree


Ingredients:


· Mango – 1 cup (chopped)

· Honey – 2 tbsp


How To Make Mango & Custard Bread Rolls:


1. To make the custard boil milk in a saucepan.

2. Once the milk comes to a boil add sugar.

3. Let the sugar melt and cook for 5-7 minutes.

4. Make a slurry of cold milk and custard powder and add it to the boiling milk.

5. Keep stirring and switch off the gas after a boil.

6. Let the custard cool down at room temperature and then refrigerate for 3-4 hours.

7. To make the bread rolls cut the sides of the bread with the help of a knife.

8. Mix all diced fruits in a bowl.

9. Dip the bread slice in mango juice and squeeze out extra juice from it.

10. Now, fill the mixed fruits in the cavity of the bread and bind it to form a bread roll.

11. Prepare all bread rolls in the same way.

12. Cover them with cling wrap and refrigerate for 2-3 hours.

13. To make mango puree add chopped mangoes and honey to the blender and blend it to a smooth paste.

14. Add food color to it and mix well.

15. Fill this puree into a piping bag.

16. Assemble everything on a serving plate.

17. To garnish drizzle mango puree and chocolate sauce on bread rolls covered with custard.

Some Pro Tips:


1. Always mix custard in cold milk otherwise it might form lumps and spoil the consistency of custard.

2. Refrigerate the bread rolls so that they become firm in shape.

3. You may use sugar instead of honey in mango puree if you like.

4. Addition of food color is optional.
