Noodles In Manchurian Gravy

Hi Chefs!!

This one pot meal Veg Noodles in Manchurian Gravy is an Indo-Chinese meal that is a hit among the kids. This is a dish which is fully loaded with vegetables. So even if your kids are fussy about eating vegetables, mommy’s be happy your kids are going to love this. This dish is a culmination of Indian Ingredients along with the Chinese style of cooking. Vegetable Manchurian Gravy is the vegetable dumplings dipped in glossy, brown, tangy, sweet and salty sauce which is full of flavors. This dish is usually served with Fried Rice or Hakka Noodles separately. But to cut down on time and energy I have combined both that is Veg Manchurian Gravy and Noodles which makes this a one pot meal. But let me tell you the taste and texture is as authentic as ever.

So lets get started……


Ingredients:

For Noodles:


· Noodles – 2 packet

· Oil – 2-3 tsp

· Salt – 1 tbsp

· Water – for boiling noodles


For Manchurian Dumplings:


· Cabbage – 1 cup (finely chopped)

· Onion – ½ cup (finely chopped)

· Carrot – ½ cup (shredded)

· Ginger Garlic Paste – 1 tbsp

· Salt – according to taste

· Red Chili Powder – 1 tsp

· Black Pepper Powder – 1 tsp

· Maida – 4-5 tbsp

· Corn flour – 4-5 tbsp

· Oil – for frying


For Gravy:


· Oil – 2-3 tbsp

· Ginger Garlic Paste – 1 tbsp

· Onion – ¼ cup (chopped)

· Carrot – ½ cup (julienne)

· Green Chili – 1-2 (chopped)

· Cabbage – 1 cup (chopped)

· Capsicum – ¼ cup (julienne)

· Schezwan Chutney – 2 tbsp

· Red Chili Sauce – 2 tbsp

· Tomato Ketchup – 1 tbsp

· Soya Sauce – 2 tbsp

· Water – 4-5 cups

· Spring Onion Green – ¼ cup

· Salt – according to taste

· Corn flour – 1-1/2 tbsp

· Water – to make slurry


How To Make Noodles in Manchurian Gravy:


1. For Noodles: Boil water in a saucepan.

2. Add noodles, oil and salt.

3. Let them boil for 3-4 minutes.

4. Strain them and pour cold water over them.

5. Keep them aside.

6. For Manchurian Dumplings: In a bowl add all the vegetables.

7. Add ginger garlic paste, salt red chili powder and black pepper powder to the vegetables.

8. Add Maida and corn flour and mix well.

9. Taking small portions make small ball size dumplings.

10. Heat oil in kadai/wok.

11. Fry the Manchurian balls till it is golden brown on medium flame.

12. Keep them aside.

13. For Gravy: In a saucepan/Kadai heat oil.

14. Add ginger garlic paste and onion, sauté for few minutes.

15. Add carrot and sauté.

16. Add cabbage and capsicum, sauté for 1-2 minutes.

17. Add all sauces, water and salt.

18. Let the gravy come to a boil.

19. Add half of the green onion.

20. Make a slurry by mixing corn flour and water.

21. Add slurry to the gravy.

22. Keep stirring and let it come to a boil.

23. Add noodles and Manchurian balls to the gravy.

24. Serve hot.

Some Pro Tips:


1. Add noodles to the water only when it starts boiling.

2. Do not overcook noodles. Immediately pour cold water over noodles while rinsing to avoid further cooking.

3. While making Manchurian balls do not add water at all.

4. Temperature of the oil to fry Manchurian balls should be moderately hot.

5. Never add corn flour directly. Always make a slurry by mixing it with water.

6. You may add or reduce quantity of sauces according to your taste.

7. Consistency of the gravy depends on your liking.
