Thupka is a traditional noodle soup from the land of Tibet. It originated from the eastern part of Tibet. Thupka refers to any soup or stew combined with noodles. It can be prepared in either veg or non-veg form. There are varieties of Thupka in Tibet which include Thentuk (hand-pulled noodles), Nepali, Gyathuk (Chinese noodles), and Pathug. It is also relished in other Indian states of Sikkim, Assam, Nagaland, Arunachal Pradesh, Ladakh, and Himachal Pradesh.
Thupka is a wholesome meal in itself. It is a great winter soup as all the vegetables that go in it are readily available in the winter season. It is a good source of proteins (non-veg), carbohydrates, and other nutrients and fiber from vegetables like mushrooms, cabbage, carrots, etc. it is great for people aspiring to lose weight as one bowl of Thupka contain almost all necessary healthy nutrition.
Let us learn how to prepare this awesome soup step by step:
Vegetable Broth:
Ingredients:
· Carrot – 1-2 (diced)
· French Beans – 7-8 ( cut in pieces)
· Coriander stems/leaves – a few
· Baby corn – 5-6
· Green onion scallions – a few
· Cabbage – ½ cup
· Mushroom – ½ cup
· Garlic pods – 7-8
· Ginger – 1-inch cut
· Onion – 1-2 ( sliced)
· Spinach (palak) – 7-8 leaves
· Peppercorn (kali mirch) – 8-10
· Cloves (lavung) – 5-6
· Cinnamon (dalchini) – 1 stick
· Bay leaf (tej patta) – 1-2
· Oil – 2tbsp
· Salt – 1tbsp
· Water – 1 liter
How To Make Vegetable Broth:
1. Heat a big kadhai/wok and add 2tbsp of oil to it.
2. Add dry spices and add ginger, garlic, and onion to it.
3. Saute for a minute and add carrot, beans, and other vegetables to it.
4. Saute for 1-2 minutes and add water.
5. Let the water come to a boil, cover with the lid, and simmer the gas.
6. Let it simmer for about 45 minutes.
7. After 45 minutes switch off the gas and strain the broth.
8. Discard the vegetables as you have all nutrients of vegetables in the broth now.
Note: This broth can be cooled and frozen as ice cubes for later use as and when required.
Paste for Thupka:
Ingredients:
· Onion – 1 big
· Tomato- 1 big
· Green chili – 1-2
· Garlic – 3-4
· Ginger – ½ inch
· Coriander leaves – ¼ cup
How to Make Thupka Paste:
1. In a blender, blend all the ingredients together to make a fine paste.
Veg Thupka Soup:
Ingredients:
· Green Onion – shallots ¼ cup
· Carrot - ½ cup julienne
· Cabbage – ½ cup julienne
· Capsicum red/green/yellow – ¼ cup
· Mushroom – ¼ cup
· Scallions – 2-3 tbsp
· Thupka paste – ½ cup
· Vegetable stock/broth – 4 cups
· Salt – to taste
· Maggie magic cube – 3-4
· Pepper powder – to taste
· Oil – 3-4 tbsp
· Boiled noodles – 2 packet
How To Make Thupka Soup:
1. Heat a wok and add oil to it.
2. When the oil is hot enough add shallots and carrots, saute them for a minute.
3. Cover it with a lid till carrots are a little tender.
4. Add other vegetables and saute for 2-3 minutes.
5. Add Thupka paste and saute it along with the vegetables.
6. Add vegetable stock and let vegetables cook in it till tender.
7. Add Maggie magic cubes or sweet chili sauce for more flavor according to your taste.
8. Season it with salt and black pepper powder.
How to serve:
1. Place boiled noodles in a soup bowl.
2. Add 2-3 ladles of soup along with vegetables to it.
3. Garnish with scallions.

Some Pro Tips:
1. You may add any amount of vegetables in the stock/broth as per your choice.
2. Extra broth can be stored in the form of ice cubes and can be later used as and when required.
3. If you do not want to make Thupka paste you may add those ingredients directly to the soup.
4. Adding Maggie magic cubes/ sweet chili sauce is up to your choice.
5. You may add vegetables to the soup as per your choice
6. If you do not have homemade vegetable stock, use ready-made veg stock cubes.
