This Vegetable soup is super easy, healthy, delicious and quick to make. This soup can be enjoyed by the people of all ages. This soup is especially good for the people suffering with diabetes, blood pressure, chronic cold or hypertension. This soup is evenly good for weight watchers, pregnant ladies and lactating mothers.
This healthy Mix Vegetable Soup is made with a combination of healthy vegetables like – Carrots, Cabbage, Beans etc. However, the choice of vegetables used in this soup depends on your palate. The taste of the soup may vary depending on the vegetables used in making the soup.

Ingredients:
For the Puree:
· Carrots (large) – 2 (roughly chopped)
· Onion (medium) – 2 (roughly chopped)
· Potato (big) – 1 (roughly chopped)
For the Soup:
· Onion (medium) – 1 (finely chopped)
· Onion Greens – ¼ cup
· Cabbage – ¼ cup (finely chopped)
· Carrot – ¼ cup (finely chopped)
· Ginger – 1 tsp (finely chopped)
· Garlic – 1 tsp (finely chopped)
· Butter – 5-10 gm
· Milk low fat – 1 cup
· Salt – according to taste
· Black pepper powder – 1 tsp
· Water – as per the requirement
How To Make Vegetable Soup:
1. For the Puree: Add all the vegetables along with 2 cups of water and salt in the pressure cooker.
2. Pressure cook for 3-4 whistles.
3. Let it cool down.
4. Blend it to a smooth puree.
5. For the Soup: In a pan add butter and let it melt.
6. Add ginger and garlic and sauté a little.
7. Add onions and sauté for 1-2 minutes.
8. Add carrot and sauté.
9. Cover with lid and let it cook on slow gas till it is little tender.
10. Add cabbage and onion greens.
11. Add milk and bring it to a boil while stirring continuously.
12. Add the stock/puree to it, and bring it to a boil while continuously stirring it.
13. Season it with salt and black pepper powder.
14. Garnish with some onion greens or mint leaves.
15. Serve hot along with accompaniments of your choice.

Some Pro Tips:
1. For making stock you may use sweet potato or butternut squash instead of potato.
2. For making soup you may use olive oil instead of butter.
3. Bring milk to a boil before adding puree/stock to avoid curdling of milk.
4. Adjust the consistency according to your preference.
5. If you like a thicker soup you may make a slurry with 1 tsp corn flour and water, add it to the soup.
