Eggless Strawberry Chocolate Cake

Hi Chefs!!

Here is my simple go-to recipe of ”Eggless Strawberry Chocolate Cake - with icing”. It has a Scrumptious filling of homemade “Strawberry Compote”, which makes it tastier. So next time when you have the celebration at home, just surprise and impress your loved ones with this awesome bake. Here I have used the simplest technique of decorating the cake - the simplest piping technique, using strawberry slices to deck it up, and filling of delicious homemade Strawberry Compote. So, even if you are not a pro in designing the cake, not to worry. These techniques are simple enough for anyone to use. Lastly, if you do not have fresh strawberries, you can use canned strawberries or strawberry crush without any issues. Just remember to follow step-by-step instructions. So let’s start……….


Materials Required:


· Measuring cups and spoons

· 6” OR 8” cake pan

· Parchment/butter paper

· Bowls big and small

· Whisker

· Hand beater

· Piping bag

· Star nozzle


Chocolate Cake:

Ingredients:


· APF/Maida – 1 ¼ cup

· Cocoa Powder – ¼ cup

· Coffee powder – 1 tsp (optional)

· Baking powder – 1 tsp

· Baking soda – ½ tsp

· Salt – a pinch

· Milk – 1 cup

· Lemon juice – ½ tbsp

· Sugar – 1 cup (powdered)

· Oil – ½ cup (odorless)

· Milk – 4 tbsp

· Vanilla essence – ½ tsp


How To Bake Chocolate Cake:


1. Pre-line your cake tin with parchment paper and grease it well on all sides with oil/butter.

2. Take one cup of milk, add lemon juice to it.

3. Mix it well and set it aside to curdle.

4. In a bowl sieve all dry ingredients; Maida, Cocoa powder, Coffee powder, Baking powder, Baking soda & Salt. Keep them aside.

5. In another big bowl add oil, milk, Vanilla essence, and Sugar. Whisk them well until sugar dissolves.

6. Now add half of the dry mixture to the wet mixture, stir until well combined with the help of a whisk.

7. Add the milk to the mixture, which was kept aside to curdle, and mix it well.

8. Add the remaining dry mixture to the wet mixture and mix it well in the cut and fold method.

9. Pour the mixture into the pre-lined baking tin.

10. Bake @180°C for 30- 35 minutes.




Some Pro Tips:


1. Always use measuring cups and spoons.

2. Always use good quality products; cocoa powder, baking powder, baking soda.

3. Always pre-line your baking tin before starting to prepare the mixture.

4. Sieving all the dry ingredients is a must so as to incorporate air and remove any foreign particles.

5. Use powdered sugar to get good results.

6. Preheating of the oven is a must.

7. Use convection mode to bake.


Chocolate Cake Icing and Decoration:

Ingredients:


· Whipping cream – 1cup

· Strawberry – 200 gm (sliced)

· Strawberry compote – 1cup (Click here for the Recipe of Compote)

· Water – for soaking


How To Do Icing:


1. Place your cake on a turntable.

2. Cut and remove the top layer of the cake. (can be used later)

3. Slice the cake into two equal parts from the center.

4. Place the cake board and apply little whipped cream on it before placing the cake.

5. Place one half of the cake on board.

6. Soak it well with water.

7. Apply whipped cream and spread it evenly on the cake.

8. Put strawberry compote and spread it evenly.

9. Place the second half of the cake on it.

10. Repeat Step 6 and Step 7.

11. Spread cream evenly on the sides of the cake as well.

12. With the help of a piping bag and star nozzle make the design of your choice.

13. Decorate with sliced strawberries.

Some Pro Tips:


1. Use Whipping cream only for icing the cake.

2. For this cake I have used 1 cup of whipping cream which on whipping doubled up.

3. Use of more or less cream is up to your choice.

4. If you do not have fresh strawberries you may use readymade strawberry crush or jam available in the market as per your choice.

5. Soaking the cake is important so that it remains moist for a longer time.
