Pumpkin Bread

Hi Chefs!



As a child, we all loved to listen and sing nursery rhymes on Pumpkin. But when it comes to eating it hardly any one of us likes it. BUT!

2. Pumpkins are a good source of Potassium, Protein, and Iron.

3. Pumpkins are fruit, not vegetables.

4. Pumpkins are 90% water.

5. Every single part of Pumpkin i.e the skin, leaves, flower, pulp, seeds, the stem is edible.


Recipe

Ingredients:


Pumpkin Puree – 1cup (Click here to find the recipe for making pumpkin puree)

Oil – 1/2cup

Milk - 1/3 cup

Eggs – 2

Powdered Sugar – 11/4cup

APF/Maida – 13/4cup

Baking soda – 1tsp

Baking powder – 1/4tsp

Salt – 1tsp

Cinnamon powder – 1tsp

Dry ginger powder – 1tsp

Almonds – 10-15 (chopped)

Cashews – 10-15(chopped)

Pumpkin seeds - a handful


How To Make Pumpkin Bread:


1. In a large bowl mix pumpkin puree, oil, milk, and eggs.

2. Add sugar to this mixture and mix until well combined.

3. In another bowl mix and sieve once, maida, baking soda, baking powder, salt, ginger powder, and cinnamon powder.

4. Gradually add the dry mixture to the wet mixture.

5. Stir them until well combined.

6. Add nuts to this mixture.



7. Pour this mixture into a pre-lined loaf pan of (10” x 5”).

8. Sprinkle some nuts over the batter in the pan.




9. Bake it in a preheated oven for 50-55 minutes at 180°C on convection mode.

Some Pro Tips:


1. All the ingredients should be at room temperature.

2. Always pre-line the baking pan before starting the procedure.

3. Instead of eggs you can use half mashed banana and increase the quantity of milk till you get the pouring consistency.

4. If baking in OTG it might take 5-10 minutes less time (every microwave/OTG has different settings).

5. Do not open the oven to check on the bread again and again.

6. It is okay to check after 45 minutes. Insert a toothpick and if it comes out clean then the bread is ready and if not bake for another few minutes.
